Biography

At the time of her program participation, Solange Saxby was a postdoctoral research scholar at the Carver College of Medicine at the University of Iowa. Her research focused on understanding the intersection of food access and quality of life for individuals living with multiple sclerosis (MS).

With a personal connection to food insecurity, Saxby's work was committed to shedding light on the challenges faced by individuals with MS, especially in rural areas. Her research project, "FARMS – Food Accessibility in Relation to Quality of Life for Rural versus Urban Iowans with Multiple Sclerosis," aimed to explore the disparities in food access between rural and urban populations and its impact on the overall well-being of those living with MS.

Through a mixed-methods approach combining surveys and focus group interviews, Saxby gathered valuable insights into the facilitators and barriers to food access for individuals with MS. 

Saxby now works as a postdoctoral research scholar at Dartmouth College in Lebanon, New Hampshire.
